Kenya Utalii College offers tailor-made training to institutions that seek to enhance skills for staff in all areas of hospitality and tourism, including customer service and branding.
A team of 30 staff members from Kenya Defence Forces (KDF) has today started a 30-day training programme on Kitchen Operations Techniques and Food and Beverage Service Techniques at Kenya Utalii College. The first 15-member team that will train on Food and Beverage Service Techniques will learn how to apply basic professional practical skill applicable in food and beverage outlets. Other areas that will be covered include knowledge in food and beverage and their services, hygiene and good grooming at the workplace, proper communication with customers, as well as handling customer complaints.
The second team will acquire skills on management and disposal of waste from the kitchen professionally. Other areas that will be covered include how to make basic stocks and soups as well as basic sauces and their derivations. The team will also learn the importance of hygiene and sanitation in the kitchen, preparation and presentation of dishes using different cooking methods, managing food storage in chillers and freezers, planning cost effective menus and managing budgetary allocation.
